From the volcano-island of the Aegean comes the white that brought Greek wine to tables across the world. Assyrtiko grows in low baskets on the volcanic ash of Santorini, swept by sun and wind: the result is a wine of taut, razor-sharp acidity, saline and mineral, able to evolve for years in bottle — uncommon among whites.
In colour it is straw yellow with greenish reflections when young, moving towards gold with ageing; clear and bright. On the nose it is intense and fairly complex: citrus — lemon and lime — peach and white flowers, with a constant saline hint. On the palate it is dry and fresh, with taut, razor-sharp acidity; markedly savoury, full-bodied and warm, with a persistent finish of mineral and citrus echoes. It is a white that refreshes and makes you think at the same time.
Santorini is what an eruption left behind: an arc of rock looking over the caldera, in the heart of the Cyclades. Here the vine grows on pumice, ash and lapilli, a poor, clay-free soil where phylloxera never took hold — which is why the vines are still ungrafted, on their own roots, many of them decades old. It is an extreme landscape: little rain, fierce sun and the relentless Aegean wind. The growers' answer is the “kouloura”, a basket training: the canes are woven into a low crown that gathers the moisture of the night dew and shields the bunches from the gusts and the heat. In this setting Assyrtiko is at its best: it ripens under a sun that would strip the acidity from almost any other grape, yet it keeps a taut, razor-sharp backbone. Alongside the dry Santorini live Nykteri, aged in wood, and Vinsanto, sweet and oxidative, from sun-dried grapes.
Its single document, amended in 2022, requires at least 85% Assyrtiko for the dry white, with Aidani and Athiri making up the rest: the threshold used to be 75%, and all new or replanted vineyards are now single-variety, the vast majority of them Assyrtiko. The maximum yield has been cut from 8,000 to 6,500 kilos of grapes per hectare, and the white must not ferment above 20 °C.
The label terms follow the ageing. Réserve requires at least one year, of which six months in oak barrels and three in bottle; Grande Réserve at least two years, of which twelve months in oak and six in bottle. Nykteri is a dry white with at least 13.5% natural alcohol, fermented in tank or barrel and then matured in wood for at least three months. Vinsanto comes from grapes picked overripe and left to dry in the sun, with at least 51% Assyrtiko: the must rises from 260 to 370 grams of sugar per litre, and the wine spends at least twenty-four months in oak, always on the two islands.
The same document describes the “aspa”, the compact soil of ash, lava and pumice that the eruptions laid over limestone and slate, and notes that basket training has been practised on the island since antiquity.
A tavolaAt the table
Taut acidity, body and a marine salinity: Assyrtiko calls for seafood and the island's dishes, from fish to feta, which its freshness lightens. Perfect with grilled octopus, where the acidity brightens its smokiness; with fried fish, which the wine cleanses at every sip; with oysters and raw seafood, which find the same saline note in the glass; and with Greek salad and feta, for which the wine has body enough.
