One hundred and thirty-seven hectares in production on a single south-facing hill above the Rhône and the town of Tain-l'Hermitage: that is the whole of the Hermitage appellation. Here Syrah gives dark, spicy, tannic reds made to last, which need years in bottle before they show everything; alongside them come whites from Marsanne and Roussanne and a rare vin de paille.
In colour Hermitage rouge is deep, consistent ruby red with purple hints when young; it shifts to garnet with orange glints after several years in bottle. On the nose it is intense and complex: blackberry, blueberry and black olive in the foreground, over a spicy backdrop of black pepper and a hint of dried violet; with age, tertiary notes of tar, leather and tobacco emerge. On the palate it is dry, fairly warm and soft, fresh and savoury, with tight, gripping tannin in youth that softens over time; robust structure, a very persistent finish. Young, it is closed: full expression arrives after ten years or more.
The hill of Hermitage rises on the left bank of the Rhône, above Tain-l'Hermitage in the Drôme département; the appellation spills only slightly into the neighbouring communes of Crozes-Hermitage and Larnage. The name comes from a hermitage. A legend published in 1836 tells of Gaspard de Stérimberg, a knight returning from the crusade against the Albigensians, who around 1224 is said to have withdrawn here as the first hermit. The appellation's own rules call the story apocryphal, but the archives of Tain record hermits on the hill from 1598, and it was from them that the height, once known as Saint-Christophe, took the name Ermitage.
The hill is not uniform. To the west the soil is granite, covered with mica-schist and gneiss that break down into a sandy, clayey grit: that is where most of the Syrah grows. To the east, old alluvial terraces left by the melting Alpine glaciers take over, with patches of loess on the highest ledges, and the white grapes, Marsanne above all, are concentrated on the more calcareous soils. The slope runs across the valley and is sheltered from northerly winds by its own steep flanks. The local climate is so warm that a few olive trees grow in the Beaumes quarter, and the appellation rules note that this position removes the risk of spring frost.
Terraces and dry-stone walls are the work of generations, built to hold in place a granite grit that would otherwise slide downhill. In the 19th century the notables who owned the vines built small pavilions and temples among them for outdoor lunches. From 1881 growers rebuilt the vineyard destroyed by phylloxera, and in 1930 the growers' union that drew its boundaries was founded. Hermitage has been an AOC since the decree of 4 March 1937, and since 2013 its slopes have been a listed site for the value of their landscape.
Hermitage is a single appellation for two colours. The red is made from Syrah, which must account for at least 85% of the blend: the rest may come from Marsanne and Roussanne, allowed in Syrah vineyards up to 15% of the vines and fermented together with the red grapes. The white is Marsanne and Roussanne only. Maximum yield is 40 hectolitres per hectare for the red and 45 for the white. In 2009 the 137 declared hectares were shared between one cooperative, seven négociants and seventeen private estates, and red wine made up 70% of production.
Among the appellations of the northern Rhône, Hermitage is the only one that provides for vin de paille. The white grapes, picked ripe, dry at ambient temperature for at least 45 days, on beds of straw, on racks or hanging; the must, very rich in sugar, ferments slowly and not to the end. The result is an amber sweet white with aromas of candied fruit and honey, made in tiny quantities: maximum yield is 15 hectolitres per hectare.
A tavolaAt the table
The red has robust structure and austere tannin: it wants juicy, rich meat, dishes of substance that leave the wine time to open up in the glass. It goes with herb-roasted lamb, with pigeon and feathered game in a dark jus, with char-grilled côte de bœuf and its caramelised juices, and at the end of the meal with a hard, long-aged cheese.
Hermitage rouge shows how much time matters in a great red: young it is closed and tannic, after ten years or so in bottle it opens into ripe fruit, spice and notes of leather and tobacco. Buy it young, leave it in the cellar and open it unhurried, decanted, alongside a roast or a game dish.
The profile described is the characteristic, recurring one for Hermitage rouge, drawn from multiple producers and vintages — not the tasting of a single year. Single-parcel selections (such as Chapoutier's L'Ermite or Delas's Les Bessards) and exceptional vintages may differ considerably.
