Stellenbosch: granito, montagne e la brezza di False BayStellenbosch: granite, mountains and the False Bay breeze

Stellenbosch lies about fifty kilometres from Cape Town, in the Western Cape, and is one of the districts of the Coastal Region in South Africa's Wine of Origin system. Sandstone mountains, granite slopes and the breeze that rises from False Bay in the hot hours all meet here. Wines of South Africa counts more than two hundred producers in the district and a winemaking tradition going back to the end of the seventeenth century, which is why the Stellenbosch name on a label covers wines that differ a great deal from one another.

La terra e il climaThe land and the climate

The mountains that enclose the district, from the Simonsberg to the Hottentots Holland and the Helderberg, are made of sandstone, the so-called Table Mountain Sandstone; granite slopes spread out at their feet. Wines of South Africa describes the granite-derived soils as highly weathered and acid, stable, well drained and good at holding water, while those derived from sandstone are sandy, low in nutrients and poor at retaining water. Among the granite hills with the most highly regarded red and yellowish-brown soils, the same source names the Bottelary Hills.

Summer heat is tempered by the sea. The breezes from False Bay blow mostly in the afternoon, from the south and south-west, and bring the vineyards some relief on the hottest days; the south-easterly wind that crosses the Cape in summer lowers the temperature by several degrees. Distance from the bay, altitude and the aspect of the slopes therefore change conditions from one vineyard to the next, even a few kilometres apart.

Wines of South Africa ties the Stellenbosch name above all to its blended reds: the Bordeaux-style blends, in which Cabernet Sauvignon works alongside Merlot, Cabernet Franc and Petit Verdot, give full-bodied, tannic reds that age well in bottle. Alongside them stands Pinotage, South Africa's best-known home-bred crossing: Abraham Izak Perold crossed Pinot Noir and Cinsaut in Stellenbosch in November 1924, planted the seeds in 1925, the year the Pinotage Association regards as the grape's birth, and the first wine came only in 1941. It gives reds with dark, intense fruit, often aged in oak, and it still divides drinkers.

Among the whites, Chenin Blanc stands out: at the Cape it was traditionally called Steen, and it is South Africa's most planted grape. Made in steel it gives fresh, savoury whites; partly fermented in oak it becomes broader. Chardonnay and Sauvignon Blanc complete the whites, while Syrah, often labelled Shiraz, rounds out the reds.

Le wards: i territori nel territorioThe wards: territories within the territory

The Wine of Origin system divides the Stellenbosch district into eight wards, sub-zones that may appear on the label: Banghoek, Bottelary, Devon Valley, Jonkershoek Valley, Papegaaiberg, Polkadraai Hills, Simonsberg-Stellenbosch and Vlottenburg. Jonkershoek Valley is a narrow valley enclosed by the mountains of the same name, east of the town; Simonsberg-Stellenbosch climbs the slopes of the Simonsberg to the north and should not be confused with Simonsberg-Paarl, the ward on the other side of the same mountain, in the Paarl district. The Bottelary Hills and Devon Valley lie north-west of the town.

The Helderberg, the mountain that looks south towards False Bay, gives its name to an area many producers mention but which is not registered as a ward. Those who enjoy the detail can look for the ward name on the label: it is the first step towards knowing which Stellenbosch the wine in the glass comes from.

L'uomo: tre secoli e mezzo di storiaThe human story: three and a half centuries

Stellenbosch is South Africa's second-oldest town. The name dates from 1679, when the Cape governor Simon van der Stel gave it to an island in the Eerste River, joining his own surname to the 'bosch', the woodland that covered the valley. A few years later, in 1692, van der Stel granted the first title deed to the estate now called Spier, where the first vines were planted; Meerlust has been in the Myburgh family since 1756. The white-gabled Cape Dutch houses, of which the town keeps some of the best-known examples, are the visible trace of that history.

The town is also home to the university where viticulture and oenology are taught, and it is there that Pinotage was born. Today the district holds historic estates and wineries founded in recent decades side by side, and the same name covers wines in very different styles.

Nel bicchiere e a tavolaIn the glass and at the table

To find your way, start with the blended reds of Cabernet Sauvignon and Merlot: full-bodied and tannic, they are served at 16-18 °C and sit well with grilled lamb, chops and beef stews, juicy, substantial dishes whose richness the tannin dries without weighing the dish down. Pinotage deserves a try without prejudice, at the same temperature, with grilled meat and slow-cooked game. Steel-made Chenin Blanc, fresh and savoury, is served at 8-10 °C with grilled fish, shellfish and roasted vegetables; the partly oak-fermented kind, broader, sits at 10-12 °C, within the band for structured or oak-aged whites, and goes with roast chicken or baked fish in a butter sauce. The Cape's traditional-method sparkling wines, called Cap Classique here, are served at 8-10 °C, from the aperitif onwards and with fried food.

The temperatures follow our guide to serving temperature. Among the district's historic estates are Kanonkop, on the slopes of the Simonsberg, and Meerlust: two names to start with for understanding the reds of Stellenbosch.
