It is the grape behind Vin Jaune, the Jura's 'yellow wine': a white that ages for years under a veil of yeast and emerges with aromas of walnut and of spices such as curry. Yet Savagnin can also be taut and fragrant, when the wine is shielded from the air.
Il carattereThe character
Dove cresceWhere it grows
Savagnin's heart is the Jura, the small French region wedged between Burgundy and Switzerland, where it grows mostly on marl: at Château-Chalon the specification describes slopes of grey Lower Jurassic marl. Across the border, in the Swiss Valais, it goes by the names Païen and Heida, and in the Upper Valais it climbs the slopes of Visperterminen up to 1,100 metres. In Italy the grape as such is almost absent: its family appears rather as aromatic Traminer (Gewürztraminer) in Alto Adige, a close relative of opposite character. It reached Australia through a mix-up, told further down.
On this Jura crag, Savagnin yields only Vin Jaune. The marls, the exposure and a microclimate favourable to the yeast veil let the wine age for at least six years and three months without topping up: the result is a yellow wine built for long keeping, sold in the 62 cl clavelin.

Vin Jaune has an almost obligatory companion: long-aged Comté, whose rich, nutty paste is in dialogue with the wine's nervy drive. It works well with poultry in a morel-mushroom cream sauce, a mild curry and shellfish in a sauce. The fresher ouillé style pairs with lake fish, scallops and medium-aged cheeses.

In 2009 Australia discovered it had spent twenty years growing as 'Albariño' what was actually Savagnin: it was spotted by the eye of ampelographer Jean-Michel Boursiquot, then confirmed by CSIRO's DNA testing. As for the 62 cl clavelin, the specification itself explains it as the volume left from one litre of wine after six years in barrel without topping up; what is missing, lost to evaporation, is called 'the angels' share'.
This is the grape's typical, recurring profile, not a tasting of a single vintage: between the under-veil and ouillé styles, and from one estate to the next, the character can change considerably.
